I think you just need to join as an openSUSE member, then you get to pick your own email alias.

I filed for membership here: https://code.opensuse.org/project/membership/issue/34 - any idea where I can pick the email alias when that has been processed?

Usually the membership officials ask which mail addresses (up to two, typically one of them is @o.o) you want when they accept the membership request. You can also save them the time for asking, and mention the address(es) you want in the code.o.o ticket ;-)
